Dallas Cowboys re-tool roster in 7-round 2021 NFL Mock Draft

Dallas already added a safety in this class but they need to keep adding more — especially if they lose Xavier Woods in free agency, which is highly likely. With that being the case, they take Tariq Thompson out of San Diego State with their fifth-round pick.
Like Trevon Moehrig who they took earlier, Thompson is a solid player in coverage although he shines more in the nickel role as a slot corner. He’s also a willing tackler and adding him would give the Cowboys some flexibility. As a rookie, he would likely serve as a special teams ace but there are enough positives in his game to consider him for a bigger role down the road.
Running back might be one of the better positions on the Cowboys entire roster with Ezekiel Elliott and Tony Pollard on the team. Zeke might not be having the greatest season right now, but a lot of that has to do with the fact that no one has to worry about the passing attack without Dak Prescott. Then again, Pollard is also having his issues as he’s averaging just 3.9 yards per rush this season — which is the same average Elliott has.
Even so, the Cowboys surely will go into 2021 with the same starting running back and same No. 2. But it wouldn’t hurt to add more depth, which is why they grab Elijah Mithcell from Louisiana. Mitchell is a quick and decisive runner who has racked up 2,801 yards as a runner and another 499 as a receiver. He’s scored 47 times for the Ragin’ Cajuns and has some experience as a kick returner as well.
